I think I might be misunderstanding your statement "Though to our knowledge, the name Immanuel was never given to Jesus, it certainly applied to him, since "God with us" is a perfect way to describe the birth of the God-Man, Jesus Christ, who is fully man and fully God"
I found at least 3 vss in my Bible where Jesus was named Immanuel.
Isa 7:14 ...a virgin will be with child and bear a son, and she will call His name Immanuel.
Matt 1:23...which restates the above verse
Isa 8:8 referring back to 7:14
Can you clear this up for me?

Isaiah's statement to King Ahaz in Prophecy that a Virgin will concieve and His name will be called Immanuel, meaning "God with us", foretold that very thing. I have never heard it any other way than it foretelling the birth of Jesus. As we see in our text (Matthew 1:23) "...Matthew 1:23 (AMP) Behold, the virgin shall become pregnant and give birth to a Son, and they shall call His name Emmanuel—which, when translated, means, God with us. It then became reality, and thus, the prophecy was indeed fulfilled.

Not only that, but the name Immanuel that was fortold, is telling everyone "Here is God with us in the form of a man".
This stuff is so awesome. God is so amazing.

It comes from the shadowing prophesy by Isaiah in Chapter 7:14 where Isaiah exhorts King Ahaz of Judah who was facing a siege by the armies of Israel and its allies. Isaiah in the passage urges Ahaz to stand firm and trust God. Isaiah told Ahaz that a virgin would concieve and bear a child to be called Immanuel as a reminder that God is with his people in times of trouble. In the time this baby would grow to be just a young child Judah's enemies would be destroyed.
The virgin birth from Marym in the new Testament is presented as a fulfillment of the above prophesy in the time of King Judal because again a child Jesus must be born and his name must be Immanuel indicating that God would be among his people again and liberate them from the enemy, this time the enemy being Satan.

Isaiah tells King Ahaz that he should stand in faith because a virgin will conceive and bear a child to be called Immanuel, meaning that "God is with us in times of trouble". Prophetic words in Isaiah fulfilled in Matthew with the Birth of Christ. Yahweh saves, Immanuel makes one complete.
JESUS ------- the author and finisher of life.

conception and the name "Immanuel" find their fullness in the
birth of Jesus to Mary?
It revealed an important truth about Jesus, that He is both God and human.
Jesus was God in the flesh, God was literally among us, “with us.” Through the Holy Spirit, Christ is present today in the life of every believer.

Then shepherds, Magi, and temple people Simeon and Anna, etc. further confirm this child is the Messiah.

The Messiah had to be a direct descendant of King David, a member of the royal family of Israel. (Jeremiah 23:5-6) Yeshua is! --- Matthew 1
The Messiah would be a man, but also more than a man. He would be God in human form.
(Isaiah 9:6-7) Immanuel, God with us ----- Yeshua is!
History tells us that only one man - Yeshua of Nazareth, fulfilled these prophecies and many others. There isn't another in all history to come even close.

The prophesy told by Isaiah described the "Virgin Birth" who would be named "Immanuel" or God with us. This prophesy was filled in the New Testament with the conception and birth of Christ. Matthew spoke of the connection of the prophesy Isaiah made about the virgin birth of Jesus to Mary.

It was fulfilled by Mary being a virgin and with God being the Father so Jesus was part of God so Immanuel is "God Is With Us"

When Jerusalem is being threatened by armies of Israel, Isaiah tells Ahaz not to fear and to stand firm. As a sign, the Lord says that a virgin will conceive and bear a child to be called Immanuel as a reminder that God is with his people in times of trouble. The virgin conception and the name Immanuel has a fuller meaning in Christ.

1. I think that the virgin birth and the name "Immanuel" completed the fullfillment of the prophecy given by Isaiah to King Ahaz.
